Since the Roman and maybe Etrurian age, the village of Cisterna has been an agricultural area.
Today are cultivated fruit trees, herbs and, soon, olive trees.
From our cultivation we produced cherry, apple, pear, apricot and fig jams and also cherry.

Herbs, used for cooking, are the basic elements to made the "Salamoia del Borgo" (Village's Brine) used to spice grilled meat and roasts.
Vegetables are the main ingredient to prepare our vegetables in oil and pickles.

Last but not least, the most particular kind of rural activity is the coltivation of autochthon capers that has been growing for ages on the village's walls, decorating them with their purple and white flower: prepared with salt, capers are the characterizing element of our traditional cuisine.

Relevant is also the Fossa Cheese , which matures in ditches probabily dated back to the Roman ages and used to preserve seeds.
